Beverage Director
Will brings over 20 years of hospitality experience to the bar, with 15 spent behind it. A brief detour into music led him from DC to Los Angeles, but what began as a means to an end quickly became a craft rooted in flavor, experience, and a deep respect for hospitality.
As Beverage Director at Pals, Will is focused on pushing low-ABV cocktails to the forefront, proving that drinking can be thoughtful, complex, and genuinely fun without feeling wrecked the next day. His approach leans into aperitifs, vermouths, and other sessionable styles designed to slow things down, keep you present, and elevate the ritual of drinking well.
